Method
- 1
Preheat your oven to 375°F (190°C) and lightly grease an 8-inch square ceramic baking dish.
- 2
In a mixing bowl, toss the sliced gala apples with ground cinnamon, ground nutmeg, and 1 tablespoon of maple syrup.
- 3
Gently fold the frozen blueberries into the spiced apples, then transfer the fruit mixture into the prepared baking dish, leveling the top.
- 4
In a separate bowl, stir together the gluten-free rolled oats, almond flour, and fine salt.
- 5
Pour the melted unsalted butter and the remaining 1 tablespoon of maple syrup over the dry ingredients, stirring thoroughly until clumps of streusel form.
- 6
Scatter the oat streusel evenly over the fruit layer, making sure the edges and center are well covered.
- 7
Bake at 375°F for 26 to 28 minutes until the blueberry and apple juices are bubbling vigorously around the sides and the oat topping turns fragrant and deep golden brown.
- 8
Remove from the oven and allow to rest for 5 minutes before scooping into bowls.
Slice the apples thinly to ensure they turn tender during the fast baking time. Leftovers keep well covered in the refrigerator for up to 4 days and re-crisp nicely in a 350°F toaster oven.
