These no-bake energy truffles bring the warm, aromatic comfort of Middle Eastern spices straight to your snack routine. Medjool dates provide just enough caramel-like sweetness to bind creamy sprouted cashews and freshly ground cardamom. Finished with a delicate dusting of lightly toasted almond flour, they make an effortless pick-me-up any time of day.

Method

    Place the almond flour in a small dry skillet over medium-low heat and toast for about 2 minutes, stirring continuously until pale golden and fragrant, then transfer to a shallow plate to cool.

    Add the raw sprouted cashews to the bowl of a food processor and pulse for about 30 seconds until finely ground into small crumbs.

    Add the chopped Medjool dates, ground cardamom, fine sea salt, and warm water to the food processor.

    Process on high for 1 to 2 minutes, stopping once to scrape down the sides, until a sticky, uniform dough gathers together into a ball.
