These Mediterranean-inspired baked apples make a comforting, naturally sweet dessert without refined sugar. Firm Gala apples are hollowed out and packed with sweet chopped figs, buttery pecans, and warm ground cardamom. Basted in golden ghee and raw honey while baking, they emerge spoon-tender and wonderfully fragrant.

Method

    Preheat the oven to 375°F (190°C).

    Using a melon baller or paring knife, core each organic Gala apple from the top down, leaving roughly a half-inch base intact so the filling remains contained.

    In a small bowl, stir together the chopped sun-dried figs, sprouted pecans, ground cardamom, a pinch of salt, 1 tablespoon of the melted grass-fed ghee, and 1 teaspoon of the raw organic honey until evenly combined.

    Spoon the fig and pecan filling firmly into the cavity of each cored apple, mounding any remaining mixture slightly over the top.

    Stand the apples upright in a small baking dish, pour 1/4 cup of water into the bottom of the pan around the fruit, and drizzle the remaining melted ghee and honey over the stuffed tops.

    Cover the dish loosely with foil and bake for 20 minutes until the apples begin to soften.

    Carefully remove the foil, baste the apples with the warm pan juices, and return to the oven uncovered for 6 to 8 minutes until easily pierced with a knife tip.

    Let the apples rest for 5 minutes in the warm dish, then spoon the fragrant pan glaze over them before serving.

Tip

Choose medium-sized, firm apples so they hold their shape during roasting. Leftovers keep covered in the refrigerator for up to 3 days and reheat gently in a 350°F oven.
