
Balsamic Glazed Roasted Mushrooms

Ingredients
Every ingredient is a real Clearshelf product, scored- 8116 oz lion's mane mushrooms, wiped clean and trimmed into bite-sized clusters
- 952 tbsp extra-virgin olive oil
- 952 tbsp aged balsamic vinegar
- 901 tbsp minced garlic
- 841/2 tsp dried whole thyme
- 971/2 tsp Italian seasoning
- 1/2 tsp fine sea salt
- 1/4 tsp freshly ground black pepper

Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.

In a wide mixing bowl, whisk together the extra-virgin olive oil, aged balsamic vinegar, minced garlic, dried whole thyme, Italian seasoning, fine sea salt, and freshly ground black pepper until combined.

Add the trimmed lion's mane mushrooms to the bowl and gently toss until each piece is evenly coated with the seasoned balsamic mixture.

Spread the mushrooms in a single layer across the prepared baking sheet, leaving space between pieces so they roast and caramelize rather than steam.

Roast at 425°F (220°C) for 15 to 18 minutes, gently stirring once at the 10-minute mark, until the mushrooms are tender and coated in a sticky, glossy glaze.

Transfer the roasted mushrooms to a warm serving platter, spoon any caramelized pan juices remaining on the sheet over the top, and serve warm.
Leftovers keep well in an airtight glass container in the refrigerator for up to 4 days and can be gently reheated in a warm skillet. If you prefer smaller bites, slice any oversized mushroom clusters in half before tossing in the glaze.
