
Black Bean and Corn Breakfast Tacos

These speedy morning tacos deliver serious fuel without cutting corners on clean ingredients. Whisked pasture-raised eggs scramble gently alongside warm, cumin-spiced black beans before being folded into sprouted grain tortillas with melted cheddar and salsa. Crack the eggs into a medium bowl, season with salt and black pepper, and whisk vigorously for 2 minutes until completely uniform and slightly frothy.

Place a small saucepan over medium heat, add the black beans, ground cumin, and chili powder, and cook for 3 to 4 minutes, stirring occasionally until heated through and fragrant.

Warm the sprouted grain tortillas in a dry skillet over medium-high heat for about 30 seconds per side until soft, pliable, and lightly toasted, about 3 minutes total for all six.

Melt the butter in a nonstick skillet over medium-low heat. Pour in the whisked eggs and cook gently for 4 to 5 minutes, lifting and pushing the curds across the pan with a silicone spatula until softly set.

Divide the scrambled eggs and spiced black beans evenly among the warm tortillas. Scatter the shredded white cheddar over top so it melts from the residual heat, finish with spoonfuls of salsa, and serve immediately.
For slightly charred flavor, blister the tortillas directly over a low open gas flame for 10 seconds per side. Store any leftover eggs and beans in separate airtight containers for up to 3 days.
