Method
- 1
In a small mixing bowl, whisk together the apple cider vinegar, minced garlic, ground cumin, salt, and freshly cracked black pepper for about 2 minutes until evenly combined and the salt begins to dissolve.
- 2
Slowly drizzle in the avocado oil while whisking vigorously for 1 minute until the dressing thickens slightly into a glossy, smooth emulsion.
- 3
Place the rinsed and drained black beans into a large serving bowl, pour over the prepared dressing, and toss gently for 2 minutes so the beans absorb the zesty cumin and garlic flavors.
- 4
Let the dressed black beans sit at room temperature for 3 minutes to allow the spices and tangy vinegar to fully penetrate.
- 5
Gently fold in the puffed corn cereal just before serving, tossing for 2 minutes until evenly distributed and lightly coated while retaining its crisp texture.
For meal prep, keep the dressed black beans refrigerated in an airtight container for up to 4 days, then fold in the puffed corn right before eating to preserve its crunch. If you prefer a spicy kick, feel free to toss in fresh sliced jalapeños.
