
Chilled Strawberry Greek Yogurt Mousse

This velvety strawberry mousse comes together in minutes without any refined sugars or artificial gelatin. Pureed strawberries fold effortlessly into airy whipped coconut cream and tangy Greek yogurt for an elegant, protein-rich treat. Ingredients
Every ingredient is a real Clearshelf product, scored- 901 1/2 cups frozen strawberries, thawed
- 781/2 cup unsweetened coconut cream, chilled
- 921 cup plain Greek yogurt, chilled
- 912 tbsp pure maple syrup
- 1 pinch fine salt

Method

Place the thawed frozen strawberries into a blender or food processor, pureeing on high speed for 2 minutes until completely smooth and liquid.

In a chilled medium mixing bowl, beat the chilled unsweetened coconut cream with an electric hand mixer on high speed for 4 minutes until light, billowy, and holding soft peaks.

Add the chilled plain Greek yogurt, pure maple syrup, and a pinch of fine salt to the whipped coconut cream, beating on medium-low speed for 3 minutes until smooth and uniformly creamy.

Pour the pureed strawberry mixture into the bowl and use a silicone spatula to fold gently for 2 minutes until the mousse turns a uniform, delicate pastel pink.

Divide the mousse evenly among 4 small dessert glasses and place in the freezer for 4 minutes to firm up slightly before serving chilled.
For the highest peaks, chill your mixing bowl and beaters in the freezer for 10 minutes beforehand. Leftover mousse can be covered and stored in the refrigerator for up to 3 days.
