This hearty one-skillet dinner brings together caramelized, tender steak bites and crispy pan-fried potatoes. Everything finishes bathed in a sizzling pool of fragrant garlic and thyme butter for steakhouse flavor on a weeknight. It is a satisfying, high-protein meal that cooks quickly from start to finish.

    Pat the cubed ribeye steak completely dry with paper towels. Season the steak bites thoroughly with 1 teaspoon of the salt and 1/4 teaspoon of the black pepper, then set aside at room temperature while preparing the potatoes.

    Place the cubed gold potatoes in a bowl and toss with 1/2 teaspoon of salt and the remaining 1/4 teaspoon of black pepper.

    Heat 1 tablespoon of the avocado oil in a large cast-iron skillet over medium-high heat. Add the seasoned gold potatoes in a single layer, cover with a tight-fitting lid, and cook undisturbed for 6 minutes to steam through.
