
Greek Chickpea Salad
A vibrant Greek chickpea salad with rich goat feta, sliced olives, and a bright cherry tomato and lemon oregano dressing.
This pantry-friendly Greek salad comes together in just fifteen minutes with wholesome Mediterranean staples. Plump chickpeas and briny olives drink in a fragrant oregano and lemon dressing enriched with sweet cherry tomato passata. Finished with creamy crumbled feta, it makes a wonderfully satisfying lunch or side dish.
Ingredients
Every ingredient is a real Clearshelf product, scored- 833 cups organic chickpeas, rinsed and drained
- 711/2 cup organic cherry tomato passata
- 581/2 cup gherkin-stuffed olives, sliced into rounds
- 901 cup goat feta cheese, crumbled
- 943 tbsp extra-virgin olive oil
- 851 tsp dried oregano
- 901/2 tsp minced garlic
- 1/2 tsp fine sea salt
- 1/4 tsp freshly ground black pepper

In a large mixing bowl, whisk together the extra-virgin olive oil, organic cherry tomato passata, dried oregano, minced garlic, fine sea salt, and freshly ground black pepper for about 3 minutes until smooth and emulsified.

Add the rinsed and drained organic chickpeas and the sliced gherkin-stuffed olives to the bowl with the dressing, taking about 3 minutes to measure and prepare.

Toss the mixture thoroughly for 2 minutes using a wide spatula so every chickpea is evenly coated in the tomato dressing.

Gently fold in the crumbled goat feta cheese and let the salad sit at room temperature for 7 minutes before serving so the legumes absorb the bright herbs and tangy dressing.
This salad keeps exceptionally well in an airtight container in the refrigerator for up to 4 days. If making ahead, reserve half of the crumbled feta to scatter over the top right before serving.
