
Greek Feta and Cherry Tomato Scramble
Soft scrambled eggs simmered with sweet cherry tomato passata, creamy sheep feta, and aromatic dried oregano in just 12 minutes.
Inspired by the classic Greek island dish strapatsada, this vibrant scramble brings together velvety eggs, sun-ripened cherry tomatoes, and crumbly feta. It comes together in one skillet in mere minutes for a rustic, protein-packed breakfast. Serve warm with freshly cracked pepper and an extra pinch of herbs.
Ingredients

- 941 tbsp Greek extra virgin olive oil
- 901 clove garlic, finely minced
- 711/2 cup cherry tomato passata
- 851/2 tsp dried oregano
- 902 oz feta cheese, crumbled
- 1/4 tsp salt
- 1/4 tsp black pepper, freshly ground

Method

In a medium bowl, whisk together the eggs, salt, and freshly ground black pepper until smooth and fully blended, about 1 minute.

Warm the Greek extra virgin olive oil in a medium nonstick skillet over medium heat for 1 minute until shimmering.

Add the minced garlic and cook, stirring constantly, for 30 seconds until fragrant without letting it brown.

Pour in the cherry tomato passata and half of the dried oregano. Simmer over medium-low heat, stirring occasionally, for 3 minutes until slightly thickened and reduced.

Lower the heat to low, then pour the beaten eggs directly into the warm tomato mixture.

Gently sweep a heatproof spatula across the bottom and sides of the pan to form soft, tender curds, cooking slowly for 2 minutes.

Scatter the crumbled feta cheese and remaining dried oregano over the pan, folding gently for 1 minute just until the cheese begins to warm through and the eggs are cooked to a soft, custardy finish. Remove from heat and serve immediately.
For the silkiest texture, keep the skillet heat low when adding the eggs so they remain custardy rather than rubbery. Best enjoyed freshly cooked, though leftovers can be stored in an airtight container in the fridge for up to 1 day.
