
Ground Bison Sweet Potato Chili

Warm the avocado oil in a large Dutch oven or soup pot over medium-high heat for 1 minute.

Add the ground bison to the pot and cook for 5 to 6 minutes, breaking the meat into small bite-sized pieces with a wooden spoon, until browned and no pink remains.

Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper, cooking for 1 minute until fragrant.

Pour in the crushed tomatoes and beef broth, stirring well and scraping up any browned bits stuck to the bottom of the pot.

Fold in the cubed sweet potatoes and bring the liquid to a rolling boil over high heat.

Reduce the heat to medium-low, cover with a tight-fitting lid, and simmer gently for 15 minutes.

Remove the lid and cook uncovered for another 3 minutes, stirring occasionally, until the sweet potatoes are fork-tender and the chili is thick. Ladle warm into four bowls.
Cut the sweet potatoes into uniform half-inch cubes so they soften quickly during the simmer. Leftovers store well in an airtight container in the refrigerator for up to 4 days.
