
Ground Turkey Shepherd's Pie with Mashed Potatoes

This comforting ground turkey shepherd's pie brings deep savory flavor to the table in well under an hour. Lean turkey simmers in a fragrant herb and tomato gravy before being blanketed in fluffy cheddar mashed potatoes. Broiled until blistered and golden, it is a nourishing, protein-packed family dinner.
Ingredients

Place the cubed gold potatoes in a medium saucepan, cover with the water, and add 1 teaspoon of the salt. Bring to a boil over high heat, then cook for 12 to 14 minutes until fork-tender.

Meanwhile, place a large ovenproof skillet over medium-high heat. Add the ground turkey and brown it for 7 to 8 minutes, breaking it into bite-sized pieces with a wooden spoon until fully cooked.

Add the minced garlic, tomato paste, dried thyme, black pepper, and the remaining 1/2 teaspoon of salt to the turkey; cook and stir for 1 minute until fragrant.

Pour in the chicken broth and stir thoroughly. Simmer over medium heat for 5 minutes until the gravy slightly reduces and coats the meat evenly, then remove from the heat.

Drain the cooked potatoes thoroughly and return them to the warm pot. Add the butter and milk, mashing until creamy and lump-free, then fold in half of the shredded cheddar cheese.

Preheat the oven broiler on high. Spread the warm mashed potatoes evenly over the turkey filling in the skillet, roughing up the surface with a fork and scattering the remaining cheddar cheese across the top.

Broil 6 inches from the heat element for 4 to 5 minutes until the cheese is melted and bubbly with golden toasted peaks. Let rest for 5 minutes before scooping into bowls.
Assemble the pie up to two days ahead and chill covered in the refrigerator; when ready to eat, bake at 375°F for 20 minutes before broiling. If you prefer a dairy-free version, swap the butter and milk for olive oil.
