
High-Protein Black Bean and Quinoa Chili

This robust plant-based chili brings together tender quinoa and two kinds of beans simmered in a zesty, garlic-infused tomato sauce. It cooks entirely in one pot in just forty minutes, making it a reliable staple for weeknight nourishment. Method

Place the quinoa in a fine-mesh sieve and rinse thoroughly under cold water; rinse and drain the canned black beans and canned red kidney beans, setting them aside.

Warm the avocado oil in a large Dutch oven over medium heat for 1 minute, then add the minced garlic and cook for 1 minute, stirring constantly until fragrant and lightly sizzling.

Add the tomato paste, chili powder, ground cumin, and garlic powder to the pot, stirring constantly for 2 minutes over medium heat until the spices darken slightly and become deeply aromatic.

Pour in the vegetable broth and canned crushed tomatoes, then stir in the rinsed quinoa, salt, and black pepper, bringing the mixture to a vigorous boil over medium-high heat for about 3 minutes.

Lower the heat to medium-low, cover the pot with a tight-fitting lid, and simmer gently for 14 minutes until the quinoa is tender and its delicate germ ring unfurls.

Remove the lid and fold in the drained canned black beans and canned red kidney beans; simmer uncovered over medium heat for 5 minutes, stirring often, until the beans are hot and the chili thickens.

Take the pot off the heat, and allow the chili to rest for 4 minutes to let the flavors settle and deepen before ladling into bowls.
Store cooled leftovers in airtight containers in the refrigerator for up to five days, or freeze for three months. If the chili thickens after chilling, stir in a splash of warm vegetable broth or water when reheating.
