
High-Protein Turkey Sausage Breakfast Burrito

These protein-dense breakfast burritos deliver bold Tex-Mex flavor in every bite. Lean ground turkey is seasoned into a savory breakfast sausage, then folded into warm sprouted grain tortillas with fluffy eggs, tender black beans, and rich cheddar. In a medium bowl, combine the ground turkey, chili powder, ground cumin, garlic powder, half of the fine salt, and half of the ground black pepper, mixing gently with your hands until the spices are evenly distributed.

Heat two teaspoons of the avocado oil in a large skillet over medium-high heat. Add the seasoned ground turkey and cook for 5 to 6 minutes, breaking the meat into bite-sized crumbles with a wooden spoon until browned and fully cooked through.

Stir the black beans into the skillet with the turkey and cook for 1 minute until warmed through, then transfer the mixture to a clean plate and set aside.

Wipe out the skillet, reduce the heat to medium-low, and add the remaining teaspoon of avocado oil. Season the beaten eggs with the remaining fine salt and ground black pepper, pour them into the pan, and cook for 2 to 3 minutes, stirring slowly and gently with a spatula until soft, tender curds form. Remove immediately from the heat.

Warm the sprouted grain tortillas in a separate dry skillet over medium heat for 30 seconds per side until soft and pliable.

Lay the tortillas flat on a clean surface. Evenly distribute the shredded white cheddar cheese, the turkey and black bean mixture, the scrambled eggs, and the salsa across the lower third of each tortilla.

Fold the left and right sides of each tortilla inward over the filling, then roll tightly from the bottom up to enclose. Return the rolled burritos to the warm dry skillet over medium heat seam-side down and toast for 1 to 2 minutes per side until crisp and golden and the cheese has melted.
Wrap cooled assembled burritos tightly in parchment paper and foil to freeze for up to one month; reheat directly in a toaster oven or skillet until hot throughout.
