
Hungarian Beef Goulash Soup
Hearty Hungarian beef goulash soup with tender grass-fed beef, golden potatoes, and rich sweet and smoked paprika simmered in under an hour.
This comforting European goulash soup features melt-in-your-mouth cubes of seared beef and tender potatoes in a fragrant, paprika-infused broth. Ingredients
Every ingredient is a real Clearshelf product, scored- 821 1/2 lb grass-fed beef stew meat, cut into 3/4-inch pieces
- 942 tbsp extra-virgin olive oil
- 901 1/2 tbsp minced garlic
- 922 tbsp tomato paste
- 901 1/2 tbsp sweet paprika
- 801 tsp smoked paprika
- 8412 oz gold potatoes, peeled and cut into 1/2-inch cubes
- 864 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground

Pat the grass-fed beef stew meat dry with paper towels and season evenly with the salt and black pepper.

Heat the extra-virgin olive oil in a heavy Dutch oven or soup pot over medium-high heat. Add the beef in a single layer and sear without moving for 3 to 4 minutes until deeply browned, then flip and brown the other side for another 3 minutes. Work in two batches if necessary to avoid crowding.

Reduce the heat to medium. Add the minced garlic and tomato paste directly into the pot with the beef, stirring continuously for 1 minute until aromatic and lightly caramelized.

Remove the pot from direct heat for 30 seconds. Sprinkle in the sweet paprika and smoked paprika, stirring quickly to dissolve and toast the spices in the residual heat and cooking juices without scorching.

Return the pot to medium-high heat and immediately pour in the beef broth, using a wooden spoon to scrape up all flavorful browned bits from the bottom of the pot. Bring the liquid to a rolling boil.

Lower the heat to medium-low, cover tightly with a lid, and simmer gently for 20 minutes until the beef cubes begin to soften.

Uncover and stir in the diced gold potatoes. Replace the lid and continue simmering over medium-low heat for 15 minutes, or until both the potatoes and beef are completely fork-tender.

Taste the broth and adjust seasoning with extra salt or black pepper if desired. Ladle hot into warmed bowls and serve immediately.
For the quickest cooking time, cut the beef into uniform 3/4-inch pieces so they turn tender within 35 minutes of simmering. Store leftovers in an airtight container in the refrigerator for up to 4 days; the paprika flavor deepens wonderfully overnight.
