
Peanut Butter Chocolate Chip Energy Bites

Ingredients

- 941 1/2 tbsp raw honey
- 1 pinch fine salt
- 871 cup gluten-free rolled oats
- 852 tbsp dark chocolate chips

In a medium mixing bowl, vigorously stir together the creamy peanut butter, raw honey, and fine salt with a wooden spoon or spatula until completely smooth and emulsified, about 2 minutes.

Add the gluten-free rolled oats to the bowl and fold thoroughly until all the oats are evenly coated in the peanut butter mixture and form a thick, cohesive dough, about 3 minutes.

Scatter the dark chocolate chips over the oat mixture and gently fold them in until evenly distributed throughout, about 1 minute.

Using a tablespoon measure, scoop portions of the dough and compress them tightly between your hands, rolling each portion into a smooth, compact 1-inch ball to yield 12 bites total, about 5 minutes.

Arrange the rolled energy bites on a small plate and let them set at room temperature for 1 minute before serving, about 1 minute.
Store energy bites in an airtight container in the refrigerator for up to one week or freeze for up to three months. If your peanut butter is especially stiff, work in an extra teaspoon of warm water or honey to help bind the mixture.
