
Savory Oatmeal with Fried Egg and Mushrooms

Warm, savory oatmeal makes an unexpectedly comforting breakfast that comes together in under twenty-five minutes. Sautéed mushrooms and minced garlic add deep umami to a creamy porridge base enriched with butter. Finished with dairy-free parmesan and a sunny fried egg, every bite is wonderfully satisfying.

- 922 tbsp butter, divided
- 816 oz lion's mane mushrooms, sliced or torn into bite-sized pieces

Slice the lion's mane mushrooms into bite-sized clusters and finely mince the garlic cloves (prep time: 5 minutes).

In a medium saucepan, combine the water and half the salt. Bring to a boil over medium-high heat, about 3 minutes.

Stir in the rolled oats, reduce the heat to low, and simmer gently for 5 to 7 minutes until thick and tender, stirring occasionally.

Stir 1 tablespoon of butter, half of the plant-based parmesan, and half the black pepper directly into the cooked oatmeal, then remove the saucepan from the heat and cover to keep warm.

While the oats finish simmering, melt 1/2 tablespoon of butter in a skillet over medium heat. Add the lion's mane mushrooms and remaining salt, sautéing for 4 minutes until golden brown and tender. Stir in the garlic and cook for 1 minute until fragrant, then transfer to a plate.

Wipe the skillet, add the remaining 1/2 tablespoon of butter, and place over medium-low heat. Crack the eggs into the pan and fry for 2 to 3 minutes until the whites are set but the yolks remain liquid and runny.

Divide the warm savory oatmeal between two shallow bowls. Top each portion with the garlic-sautéed mushrooms and a fried egg, then finish with the remaining plant-based parmesan and freshly cracked black pepper.
Cook the eggs right before serving so the yolks are warm and runny when spooned over the hot porridge.
