
Thai Coconut Chicken Curry

This aromatic Thai-inspired coconut chicken curry comes together quickly in a single skillet. Rich coconut milk blends with vibrant curry spices, savory coconut aminos, and tender chicken for a satisfying weeknight meal. Fluffy jasmine rice absorbs every drop of the creamy, spiced sauce.
Ingredients
Every ingredient is a real Clearshelf product, scored- 961 1/2 cups jasmine rice, rinsed
- 2 1/2 cups water
- 98700 g chicken breast, sliced into bite-sized strips
- 961 tbsp virgin coconut oil
- 901 tbsp minced garlic
- 841 tsp ground ginger
- 701 1/2 tbsp curry powder
- 881 3/4 cups coconut milk
- 862 tbsp coconut aminos
- 1 tsp salt

Combine the rinsed jasmine rice and water with 1/4 teaspoon of the salt in a medium pot over medium-high heat, bring to a boil, then cover, reduce heat to low, and cook for 15 minutes before removing from heat to rest covered for 5 minutes.

While the rice cooks, melt the virgin coconut oil in a large deep skillet or sauté pan over medium-high heat.

Add the sliced chicken breast strips and sear for 4 to 5 minutes, stirring occasionally, until lightly browned on the outside.

Lower the heat to medium, stir in the minced garlic, ground ginger, and curry powder, and cook for 1 minute until highly fragrant.

Pour in the coconut milk, coconut aminos, and the remaining 3/4 teaspoon of salt, stirring well to scrape up any browned bits from the bottom of the pan.

Bring the curry to a gentle simmer and cook uncovered for 6 to 8 minutes, until the sauce thickens slightly and the chicken is fully cooked through.

Turn off the heat, and fluff the resting jasmine rice with a fork before ladling the hot coconut chicken curry on top.
Store leftovers in an airtight glass container in the refrigerator for up to 4 days. If the sauce thickens when chilled, loosen it with a splash of water when gently reheating on the stovetop.
