
Creamy Spiced Sweet Potato Soup

This vibrant golden soup brings cozy warmth to the table with minimal prep. Sweet potatoes simmer until tender before being pureed into a velvety blend of coconut milk and fragrant spices. A splash of lemon juice balances the natural sweetness for a deeply satisfying, plant-based bowl.
Ingredients

- 843 cloves garlic, minced
- 841 tsp ground ginger
- 881/2 tsp ground cinnamon
- 891/4 tsp ground nutmeg
- 863 sweet potatoes, peeled and cut into 1/2-inch cubes
- 3 cups water
- 1 tsp salt
- 1/4 tsp black pepper
- 881 cup coconut milk

Method

Warm the extra-virgin olive oil in a Dutch oven or medium soup pot over medium heat for 2 minutes.

Add the minced garlic, ground ginger, ground cinnamon, and ground nutmeg, stirring constantly for 1 minute until fragrant.

Add the sweet potatoes, water, salt, and black pepper, stirring to combine all the spices evenly.

Bring the pot to a boil over high heat, which takes about 4 minutes, then reduce the heat to medium-low.

Cover with a fitted lid and simmer gently for 12 minutes, or until the sweet potato cubes are completely fork-tender.

Remove the pot from the heat and stir in the coconut milk.

Puree with an immersion blender for 2 minutes until completely smooth, silky, and uniform in color.

Return to low heat for 1 to 2 minutes to warm through, then ladle the soup into bowls and serve.
Leftovers keep well in an airtight container in the fridge for up to five days. If the soup thickens upon chilling, simply whisk in a splash of warm water when reheating on the stove.
