
Crispy Spiced Roasted Chickpeas
Crunchy roasted chickpeas tossed with olive oil, ground cumin, smoky paprika, and garlic powder for a wholesome snack.
These crunchy spiced chickpeas deliver all the savory satisfaction of chips with plenty of plant-based protein and fiber. Rinsed chickpeas are dried thoroughly, roasted until crisp, and tossed in warm Middle Eastern spices. Enjoy them by the handful as an afternoon snack or scatter them over salads and creamy grain bowls.
Ingredients

Method

Position a rack in the center of the oven and preheat to 425°F (220°C).

Spread the rinsed chickpeas over a clean kitchen towel and gently roll another towel over them for 3 to 4 minutes until completely dry, discarding any loose papery skins.

Transfer the dry chickpeas directly onto a large rimmed baking sheet in an even, single layer and roast unseasoned for 15 minutes to evaporate remaining moisture.

Carefully take the baking sheet from the oven, drizzle with the extra-virgin olive oil, and sprinkle over the ground cumin, smoked paprika, garlic powder, fine sea salt, and black pepper.

Toss everything thoroughly with a spatula right on the sheet until every chickpea is glossy and coated in spices, then re-spread into a single layer.

Return to the oven and roast for another 8 to 10 minutes, shaking the pan once halfway through, until deeply golden and audibly crunchy.

Turn off the oven, crack the door slightly, and let the baking sheet sit inside for 2 minutes to finish crisping before pouring into a serving bowl.
Moisture is the enemy of crunch, so ensure the chickpeas are completely dry before roasting. Store cooled leftovers uncovered or in a loose paper bag at room temperature so they do not trap steam and soften.
