Method
- 1
Line an 8x4-inch loaf pan with parchment paper, leaving an overhang along the edges for easy lifting, and measure out your ingredients (2 minutes).
- 2
Combine the finely chopped 100% dark chocolate and virgin coconut oil in a heatproof bowl set over a saucepan of gently simmering water over low heat, stirring occasionally until completely melted, glossy, and smooth (4 minutes).
- 3
Remove the bowl from the heat. Pour in the whole tahini, maple syrup, ground cinnamon, and fine sea salt, then whisk vigorously until the mixture thickens into a glossy, uniform emulsion (2 minutes).
- 4
Pour the warm chocolate tahini mixture into the prepared loaf pan, tilting the pan and smoothing the top with a spatula to create an even layer (2 minutes).
- 5
Transfer the loaf pan into the freezer and chill until the fudge is completely firm to the touch and solid throughout (10 minutes).
- 6
Use the parchment overhang to lift the fudge slab onto a cutting board, then slice cleanly into 8 equal squares and serve chilled (0 minutes).
Store leftover fudge squares in an airtight container in the refrigerator for up to two weeks, or keep them frozen for up to two months. Serve straight from the cold so the fudge retains its firm bite before melting on the palate.
