
No-Bake Peanut Butter Oatmeal Chocolate Bars
Chewy no-bake oat bars bound with creamy peanut butter and raw honey, finished with a luscious dark chocolate drizzle.
These chewy, wholesome squares come together on the stovetop in minutes without turning on the oven. Creamy peanut butter and pure raw honey bind hearty rolled oats into a dense, satisfying base. A silky ribbon of melted dark chocolate across the top makes each bite feel like a decadent confection.
Ingredients

- 931/2 cup creamy peanut butter
- 941/4 cup raw honey
- 1 pinch salt
- 8650 g dark chocolate, finely chopped

Method

Line an 8x4-inch loaf pan or small square baking dish with parchment paper, leaving an overhang on the sides for easy lifting, and set aside for 2 minutes.

In a small saucepan set over low heat, combine the creamy peanut butter and raw honey, warming gently for 3 minutes while stirring constantly until the mixture melts into a completely smooth, glossy liquid.

Remove the saucepan from the heat, add the gluten-free rolled oats and a pinch of salt, and stir vigorously for 2 minutes until all the dry oats are thoroughly moistened and sticky.

Transfer the oat mixture into the lined pan and use the back of a flat spatula to press it firmly into an even, compact layer across 3 minutes.

Place the finely chopped dark chocolate and virgin coconut oil into a small heatproof bowl set over a gentle water bath on low heat, stirring for 3 minutes until completely melted and glossy.

Use a spoon to drizzle the warm melted chocolate evenly over the pressed oat base in decorative zigzags, taking about 2 minutes.

Transfer the pan to the freezer for 10 minutes to rapidly chill until the base is firm and the dark chocolate drizzle has hardened, then lift out by the parchment and slice into 8 equal bars.
Store the cut bars in an airtight container in the refrigerator for up to a week, or freeze them layered between sheets of parchment paper for up to a month.
