
Ground Turkey and Sweet Potato Breakfast Skillet

Ingredients

Method

Heat 1 tablespoon of the avocado oil in a large 12-inch skillet over medium-high heat. Add the sweet potatoes, 1/4 teaspoon of the salt, and the water, then immediately cover with a tight-fitting lid to steam for 6 minutes until mostly tender.

Remove the lid and sauté the sweet potatoes over medium heat for 4 minutes, stirring occasionally until golden brown and soft at the center, then transfer to a side plate.

Add the remaining 1 tablespoon of avocado oil to the skillet over medium heat. Add the ground turkey, garlic powder, smoked paprika, ground cumin, black pepper, and 1/2 teaspoon of the salt, breaking up the meat with a spatula for 5 minutes until browned and cooked through.

Return the sweet potatoes to the skillet with the turkey and toss together for 1 minute until evenly combined and hot.

Make 4 evenly spaced wells in the turkey and sweet potato mixture. Crack one of the eggs into each well, then sprinkle the remaining 1/4 teaspoon of salt over the eggs.

Cover the skillet, reduce the heat to medium-low, and cook for 3 to 4 minutes until egg whites are firm and yolks are still soft. Serve immediately warm from the pan.
Dice your sweet potatoes small so they soften rapidly in the pan. To save time on busy mornings, steam the sweet potato cubes the evening before and store them chilled in an airtight container.
