Kimchi fried rice is a vibrant Korean comfort staple that comes together in minutes. Tender jasmine rice crisps in hot oil alongside tart, spicy fermented kimchi and savory coconut aminos. Topped with a sunny-side-up egg boasting lacey, crunchy edges and a rich runny yolk, it makes a wonderfully hearty breakfast.

    In a small pot, bring the white jasmine rice and water to a rolling boil over high heat. Cover with a tight-fitting lid, reduce the heat to low, and simmer for 10 minutes until the water is completely absorbed and the grains are tender. Spread the hot rice onto a large plate to steam off and cool slightly for 2 minutes.

    While the rice cooks, heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Crack the eggs directly into the shimmering oil, season with a pinch of the salt, and fry undisturbed for 2 to 3 minutes until the egg whites are crisp and golden around the edges while the yolks remain softly runny. Gently transfer the fried eggs to a side plate.

    Pour the remaining 1 tablespoon of avocado oil into the same skillet over medium heat. Add the minced garlic and chopped kimchi, and sauté for 2 minutes until fragrant and slightly caramelized.

    Increase the heat to high, then add the cooled cooked jasmine rice, reserved kimchi brine, coconut aminos, and the remaining salt to the skillet. Press the rice down firmly into the pan and stir-fry vigorously for 3 minutes, breaking up any clumps, until the grains are evenly colored, slightly charred, and sizzling.

    Spoon the hot kimchi fried rice into two shallow bowls. Top each portion with a crispy fried egg and garnish with thin strips of sushi nori before serving immediately.

Tip

For the crispiest rice, use cold leftover jasmine rice straight from the refrigerator if you have it on hand. Any leftover fried rice can be kept in an airtight glass container in the fridge for up to three days.
