    Warm 1 teaspoon of avocado oil in a small saucepan over medium heat. Add the cooked pinto beans, ground cumin, garlic powder, water, and half of the salt.

    Simmer the beans for 4 to 5 minutes until hot and fragrant, mashing about half of them with the back of a fork to create a coarse, creamy texture, then remove from heat and cover.

    Crack the eggs into a mixing bowl, season with the black pepper and the remaining salt, and whisk briskly for 1 minute until completely uniform and frothy.

    Heat the remaining 2 teaspoons of avocado oil in a nonstick skillet over medium-low heat. Pour in the eggs and cook gently for 3 to 4 minutes, using a silicone spatula to sweep wide, soft curds from the edges toward the center.
