
Korean Ground Beef Bulgogi Bowl

This weeknight-friendly take on Korean bulgogi delivers rich, caramelized flavor in just twenty-five minutes. Grass-fed ground beef cooks quickly in a savory garlic and coconut amino glaze, offering plenty of satisfying protein. Paired with fluffy jasmine rice and tangy fermented kimchi, it makes a balanced, dairy-free dinner in a single bowl.
Ingredients

- 2 1/2 cups water
- 1/2 tsp salt
- 971 tbsp avocado oil
- 971 1/2 lb ground beef
- 861/4 cup coconut aminos
- 941 1/2 tbsp raw honey
- 901 1/2 tbsp minced garlic
- 841/2 tsp ground ginger
- 1/4 tsp black pepper, freshly cracked
- 881 cup kimchi, coarsely chopped

Combine the rinsed jasmine rice, water, and half of the salt in a medium saucepan over high heat. Bring to a rolling boil for 3 minutes, then cover tightly with a lid, reduce heat to low, and simmer undisturbed for 12 minutes until tender.

While the rice cooks, whisk together the coconut aminos, raw honey, minced garlic, ground ginger, black pepper, and the remaining salt in a small bowl until thoroughly blended.

Heat the avocado oil in a wide skillet over medium-high heat for 1 minute until shimmering. Add the ground beef and press it into an even layer, letting it sear undisturbed for 3 minutes to develop browned edges.

Break the beef into smaller crumbles with a wooden spatula and sauté for another 3 minutes until fully cooked through and no longer pink.

Pour the bulgogi sauce mixture over the cooked ground beef in the skillet. Cook over medium-high heat, stirring constantly, for 2 minutes until the liquid reduces into a glossy, caramelized coating on the meat.

Remove the jasmine rice from heat, fluff with a fork, and divide evenly among four wide bowls. Spoon the hot glazed bulgogi beef over the rice and arrange a serving of cold kimchi alongside before serving.
Store leftover beef and rice separately in airtight glass containers in the refrigerator for up to 4 days. Keep the kimchi chilled until serving to maintain its crisp crunch and live cultures.
