Ingredients

- 862 sweet potatoes, peeled and cut into 1/2-inch cubes

Preheat the oven to 425°F (220°C) and line an extra-large rimmed baking sheet with parchment paper for easy cleanup.

Peel the sweet potatoes and cut them into uniform 1/2-inch cubes so they roast through quickly and evenly. Slice the chicken sausage links into 1/2-inch thick rounds.

Spread the cubed sweet potatoes onto the prepared baking sheet. Drizzle with avocado oil, then season evenly with smoked paprika, garlic powder, dried thyme, salt, and black pepper. Toss directly on the sheet until every piece is glossy, then spread into an even, single layer.
