This Thai-inspired coconut jasmine rice makes the ultimate fragrant foundation for curries, stir-fries, and grilled skewers. Method

    Warm the virgin coconut oil in a medium heavy-bottomed saucepan with a tight-fitting lid over medium heat for 1 minute until fully melted and glossy.

    Add the rinsed and drained white jasmine rice to the pot. Stir constantly for 2 minutes to coat every grain in the oil until lightly translucent and toasted at the edges.

    Sprinkle in the ground ginger, garlic powder, and salt. Stir rapidly for 30 seconds until the spices release their fragrance.
