Golden garlic, rich butter, and fresh thyme infuse the mushrooms before everything is crowned with tangy goat cheese and lively radish microgreens. Method

    Place a medium saucepan over medium heat. Add the rinsed raw buckwheat groats to the dry pan and toast, stirring frequently, for 3 minutes until fragrant and lightly deepened in color.

    Pour in the water and 1/2 teaspoon of the salt. Bring to a rolling boil over high heat, then immediately reduce the heat to low, cover with a tight-fitting lid, and simmer gently for 12 minutes until all the liquid is absorbed.

    Remove the saucepan from the heat, leave the lid on, and let the buckwheat steam undisturbed for 3 minutes, then fluff with a fork.

    While the buckwheat cooks, heat the extra virgin olive oil and 1 tablespoon of the unsalted butter in a large skillet over medium-high heat until sizzling, about 1 minute.
