Method
- 1
Preheat the oven to 400°F (200°C) and line a small baking sheet with parchment paper.
- 2
Slice a gentle lengthwise slit into each Medjool date and pull out the pit, keeping the date whole.
- 3
Tuck 1 whole almond inside the center cavity of each date and gently pinch the seam closed.
- 4
In a small ramekin, whisk together the avocado oil, smoked paprika, salt, and freshly ground black pepper.
- 5
Roll each stuffed date in the smoky oil mixture until evenly coated, then set seam side down on the baking sheet.
- 6
Bake at 400°F for 8 minutes until sizzling and fragrant, then gently turn each date over with tongs.
- 7
Bake for another 5 minutes until the skins are deeply caramelized and slightly crisp at the edges.
- 8
Remove from the oven and allow to rest on the baking sheet for 2 minutes so the glaze sets before serving warm.
You can stuff and season the dates up to a day ahead; simply cover and refrigerate them until ready to bake. For extra crunch, toast the almonds in a dry skillet for 2 minutes before stuffing.
