
Goat Cheese and Walnut Stuffed Medjool Dates

These sweet, tender Medjool dates make a sophisticated Mediterranean bite in minutes. Tangy soft goat cheese balances the natural caramel richness of the dates, while toasted walnuts add a pleasant crunch. A final touch of honey and dried thyme brings the savory-sweet profile together beautifully.
Ingredients
Every ingredient is a real Clearshelf product, scored- 964 organic Medjool dates, pitted
- 872 tbsp raw goat soft chèvre cheese, softened at room temperature
- 922 tbsp raw heirloom walnuts, coarsely chopped
- 941 tsp raw honey
- 841/4 tsp organic whole thyme
- 1 pinch salt

Method

Place the raw heirloom walnuts in a small dry skillet over medium-low heat. Toast for 3 to 4 minutes, shaking the pan often, until lightly fragrant and golden. Transfer to a cutting board to cool for 1 minute.

Using a small paring knife, slice a lengthwise slit down one side of each organic Medjool date and remove the pits, taking care not to cut entirely in half.

Spoon about 1 1/2 teaspoons of softened raw goat soft chèvre cheese into the pocket of each date.

Press the chopped toasted walnuts gently into the soft chèvre inside each filled date.

Arrange the stuffed dates on a serving dish, drizzle lightly with raw honey, and finish with a sprinkle of organic whole thyme and a tiny pinch of salt.
Assemble these up to a day ahead and store chilled in an airtight container; bring to room temperature for 10 minutes and add the honey drizzle right before serving.
