
Spicy Avocado Deviled Eggs

Method

Bring the water to a rolling boil in a medium pot over high heat for about 4 minutes.

Carefully lower the eggs into the boiling water with a slotted spoon, reduce the heat slightly to maintain a steady simmer, and cook for 9 minutes.

While the eggs cook, prepare an ice water bath; transfer the boiled eggs into the ice bath immediately when the timer sounds and let them chill for 3 minutes.

Gently tap the eggs all over to crack the shells, peel them under cool running water, and slice each egg cleanly in half lengthwise.

Pop the cooked yolks into a small mixing bowl and arrange the white halves hollow-side up on a serving plate.

Mash the yolks finely with a fork, then add the avocado oil, Dijon mustard, hot sauce, salt, and black pepper, whisking vigorously for 2 minutes until glossy and completely smooth.
