Method

  1. 1

Place the cut gold potatoes into a large pot, cover with the water and 1 teaspoon of the salt, and bring to a rapid boil over high heat, about 6 minutes.

  2. 2

Lower the heat to medium and simmer until the potatoes pierce easily with a fork, about 12 to 14 minutes.

  3. 3

While the potatoes cook, melt 2 tablespoons of the butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently until fragrant and soft without browning, about 2 minutes, then stir in the whole milk and warm through for 1 minute before removing from the heat.

  4. 4

Drain the cooked potatoes thoroughly in a colander, then return them to the warm, empty pot over low heat for 1 minute, shaking gently so excess surface moisture evaporates.

  5. 5

Mash the potatoes using a potato masher until light and broken down.

  6. 6

Pour in the warm garlic-butter-milk mixture, the remaining 4 tablespoons of butter, sour cream, remaining half teaspoon of salt, and black pepper, then whip vigorously with a wooden spoon or whisk for 1 to 2 minutes until glossy and silky smooth.

Tip

For the fluffiest texture, be sure to steam off residual water in the warm pot before adding fats. Store leftovers in a sealed container in the refrigerator for up to 4 days and reheat gently with a splash of milk.
