This restaurant-style hummus achieves its pillowy, silky texture by whipping wholesome sesame tahini with lemon juice before blending in tender chickpeas.     Pour the sesame tahini into the bowl of a food processor and blend on high for 1 to 2 minutes until lightened in color and thick.

    Add the minced garlic, ground cumin, and salt to the tahini mixture, then pulse for 30 to 45 seconds to thoroughly combine.

    Add the drained organic chickpeas to the processor bowl.

    Blend continuously on high for 3 to 4 minutes, stopping once halfway through to scrape down the bowl sides, until the chickpeas break down into a uniform purée.

    While blending on low speed, slowly stream in the ice-cold water and 3 tablespoons of the extra-virgin olive oil; continue blending on high for 2 to 3 minutes until the spread turns silky, fluffy, and completely smooth.

    Spoon the hummus into a broad, shallow bowl, swirl a decorative well into the center with the back of a spoon, and finish with the remaining tablespoon of extra-virgin olive oil and a dusting of ground paprika.
