Method
- 1
Heat the avocado oil in a large soup pot or Dutch oven over medium-high heat until shimmering.
- 2
Add the ground beef and sear, breaking it apart into small bite-sized morsels with a wooden spatula, until browned and cooked through, about 6 to 7 minutes.
- 3
Stir in the minced garlic and ground ginger, cooking until fragrant and aromatic, about 1 minute.
- 4
Add the chopped kimchi and cook, stirring frequently, until the cabbage softens slightly and takes on color, about 3 to 4 minutes.
- 5
Pour in the beef bone broth and coconut aminos, then season with fine sea salt and freshly ground black pepper.
- 6
Bring the liquid to a rolling boil over high heat, then reduce the heat to medium-low and simmer uncovered for 8 minutes to let the flavors meld together.
- 7
Ladle the hot soup evenly among four deep bowls and serve immediately.
Store any leftovers in an airtight glass container in the refrigerator for up to 4 days; the broth will become even richer overnight. Reheat gently over medium-low heat on the stove until warmed through.
