Sweet potatoes, minced garlic, and aromatic thyme melt into the broth, while a splash of raw apple cider vinegar brightens every spoonful.     Scatter the sweet potatoes and minced garlic evenly across the bottom of a 6-quart or larger slow cooker.

    Pour the bone broth and apple cider vinegar over the sweet potatoes, then stir in 1 teaspoon of the salt, 1/4 teaspoon of the black pepper, and half of the dried thyme.

    Rub the patted-dry whole chicken all over with the extra-virgin olive oil, then season the skin and cavity with the remaining salt, remaining black pepper, and remaining dried thyme.

    Nestle the whole chicken breast-side up into the slow cooker directly on top of the sweet potatoes and broth.

    Cover with the lid and cook on the High setting for 215 minutes, until the chicken is fall-apart tender and pulls away easily from the bone.

    Carefully transfer the whole chicken to a large cutting board using tongs and a carving fork. Shred the tender chicken meat into bite-sized pieces, discarding the skin and bones.

    Return the shredded chicken meat to the slow cooker, stir gently into the hot broth and sweet potatoes, and let rest for 15 minutes before ladling into deep bowls.

Tip

Refrigerate leftover soup in an airtight container for up to 4 days, or freeze portions for up to 3 months. The soup will naturally gelatinize when chilled due to the rich bone broth and chicken collagen, loosening into a silky broth once reheated.
