Method
- 1
Place a small dry skillet over medium heat, add the raw walnuts, and toast for 3 minutes, tossing frequently until fragrant and lightly browned. Transfer the toasted nuts to a small bowl to cool slightly.
- 2
Return the skillet to medium-low heat and add 1 tablespoon of the extra-virgin olive oil and the minced garlic. Sauté for 30 seconds until aromatic without browning.
- 3
Pour the organic cherry tomato passata into the skillet, season with the black pepper, and gently simmer for 2 minutes until hot and slightly thickened. Transfer the warm tomato dip to a small serving ramekin.
- 4
In a small prep bowl, stir together the remaining 2 tablespoons of extra-virgin olive oil and the dried oregano.
- 5
Set the ramekin of warm tomato dip onto the center of a wooden serving board or large platter.
- 6
Arrange the goat feta cubes, drained gherkin-stuffed olives, toasted walnuts, and sea salt flaxseed crackers in clusters around the dip, then generously drizzle the oregano-infused extra-virgin olive oil over the feta cubes and serve immediately.
Assemble the dry components up to 4 hours in advance and cover loosely at room temperature; add the warm tomato dip and oregano oil drizzle just before serving.
