
Whipped Cottage Cheese Dip with Sourdough Toast

Ingredients
Every ingredient is a real Clearshelf product, scored- 902 cups whole milk cottage cheese
- 942 tbsp extra-virgin olive oil, divided
- 901 tsp minced garlic
- 711/2 cup cherry tomato passata
- 778 slices sourdough bread, thickly sliced
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper, freshly cracked

Method

Brush both sides of the sourdough bread slices with 1 tablespoon of extra-virgin olive oil.

Warm a large skillet over medium-high heat and toast the bread slices for 2 minutes per side until crisp and golden brown, then transfer to a serving platter.

In the same skillet over medium heat, add the cherry tomato passata along with a pinch of fine sea salt and black pepper; simmer gently for 2 to 3 minutes until warmed through and lightly thickened, then remove from heat.

Add the whole milk cottage cheese, minced garlic, remaining 1 tablespoon of extra-virgin olive oil, 0.5 teaspoon of fine sea salt, and 0.25 teaspoon of black pepper to a food processor or high-speed blender.

Blend on high speed for 1 to 2 minutes, scraping down the sides once, until the mixture is completely smooth, airy, and velvety.

Spoon the whipped cottage cheese into a shallow serving bowl, swirl the warm cherry tomato passata over top, and serve immediately with the warm sourdough toast.
You can blend the cottage cheese dip up to two days ahead and refrigerate it in an airtight container; simply spoon the warm cherry tomato passata on top right before serving.
