Pour the water into a medium saucepan and bring to a gentle simmer over medium heat for about 4 minutes.

In a medium bowl, combine the Greek yogurt, minced garlic, and salt, whisking until smooth and creamy.

Spoon the seasoned yogurt evenly across the bottom of two shallow serving bowls, using the back of a spoon to create gentle wells.

Crack each of the eggs into separate small ramekins or cups.

Stir the simmering water in a circular motion to form a gentle whirlpool, then slide the eggs into the water one by one.

Poach the eggs over medium-low heat for 3 to 4 minutes, until the whites are fully set and opaque but the yolks remain softly liquid.

While the eggs cook, melt the salted butter in a small skillet over low heat for 1 minute, then stir in the smoked paprika until fragrant and foamy, removing from heat after 30 seconds.

Take the Greek yogurt out of the refrigerator 10 minutes beforehand so it does not rapidly chill the warm poached eggs and spiced butter. For tidy poached eggs, strain away any watery outer whites through a fine mesh sieve before sliding them into the water.
