Method
- 1
In a large skillet over medium-low heat, warm 2 tablespoons of extra-virgin olive oil. Add the minced garlic and sauté gently for 1 to 2 minutes until fragrant and soft without browning.
- 2
Add the organic tomato paste and dried oregano to the pan. Cook while stirring continuously for about 2 minutes, until the paste darkens into a deep rust red and coats the oil.
- 3
Pour in the cherry tomato passata and water. Increase heat slightly to bring the sauce to a gentle simmer, cooking for 3 to 4 minutes until slightly thickened.
- 4
Fold in the drained cannellini beans, fine sea salt, and freshly ground black pepper. Reduce heat to low and simmer uncovered for 6 to 7 minutes, stirring occasionally to let the beans absorb the savory sauce.
- 5
Remove skillet from heat. Spoon the basil pesto over the top, swirl it lightly into the warm beans, and finish with a drizzle of the remaining 1 tablespoon of extra-virgin olive oil before serving.
Leftovers store beautifully in an airtight container refrigerated for up to 4 days. Reheat gently on the stovetop with an extra tablespoon of water or broth to restore the velvety sauce.
