Method

Grate the sharp white cheddar cheese and jalapeno jack cheese on the large holes of a box grater and measure out the remaining ingredients.

Melt the organic butter in a wide cast-iron skillet over medium heat, add the minced garlic, and cook for 1 to 2 minutes until fragrant and pale golden.

Stir in the puffed corn, chili powder, smoked paprika, salt, and black pepper, toasting and tossing continuously over medium heat for 3 to 4 minutes until golden and deeply aromatic.

Turn the heat down to low, then fold in the sour cream, stirring gently for 2 minutes until a warm, creamy sauce envelops the corn.

Scatter in the shredded jalapeno jack cheese and 1 cup of the shredded sharp white cheddar cheese, stirring for 2 to 3 minutes until fully melted, smooth, and gently bubbling around the edges.

Sprinkle the remaining half-cup of sharp white cheddar cheese evenly over the top, remove the skillet from the heat, and let it rest for 1 minute until soft and melted before serving warm.
Store any leftovers in a sealed container in the refrigerator for up to 3 days. Reheat gently in a small skillet over low heat with an extra splash of sour cream to restore its velvety texture.
