Method
- 1
Finely chop the organic dried mango slices into bite-sized pieces so they puree effortlessly.
- 2
Pour the ice-cold water and chilled unsweetened coconut cream into a high-speed blender container.
- 3
Add the chopped organic dried mango slices, dried banana slices, and a pinch of salt to the blender bowl.
- 4
Let the mixture rest in the pitcher for 3 minutes to allow the fruit pieces to soften slightly around the edges.
- 5
Secure the lid and blitz on low speed for 30 seconds to break down the fruit chunks.
- 6
Increase to high speed and blend for 1 to 2 minutes, stopping once to scrape down the pitcher walls, until the mixture is completely velvety, thick, and resembles soft-serve ice cream.
- 7
Divide immediately among four chilled dessert cups for an instant soft-serve texture, or chill in the freezer for 5 minutes for firmer scoops.
Serve immediately for the silkiest soft-serve consistency. Any leftovers can be frozen in an airtight container for up to two weeks; let sit on the counter for 10 minutes to soften before scooping.
